Universe 7 proved to be the strongest and most efficient of all universes at the end of the Tournament of Power. However, if the story only focuses on this universe as its sole focus, then there aren't many ways to keep the story fresh and avoid introducing plot holes. The characteristics of Mor, an ancient and powerful evil, and Granola, the one who will take revenge on the Saiyans with the Dragon Balls, have already been seen, so if something like this happens next, it will quickly become redundant.
Conversely, if Universe 7 suddenly has a MacGuffin that is somehow so powerful that it takes the strongest characters in the setting to defeat it, what Dragon ball certainly not a stranger, then it will be an equally bad story. Dragon Ball Super revealed that there are a total of 12 universes, each as complex and vast as the one where the characters live. Characters from these universes come in all shapes and sizes, with some so powerful that they can apparently fight their own God of Destruction, as evidenced by Jiren's overwhelming strength.
The main focus of Tournament of Power was on these universes, where many new characters with complex backstories were introduced, opening the floodgates for the story to eventually travel to these places and look into their lives. One of the most promising potential storylines involves the Universe 6 Saiyans capturing Goku, Vegeta, and the fans' interest due to the differences in lifestyle between them and the Universe 7 Saiyans.
As Prince, this is a storyline that will directly affect Vegeta, and it's something that many fans have been asking to see for years, as it would give him a glimpse of what the Saiyan race would look like without the war-like tendencies that they have evolved over the years. The Universe 6 Saiyans have mesmerized fans since their first appearance, so it would be nice to see them again.
Moreover, one of the greatest mysteries of all Super was Jiren, the very embodiment of power for Universe 11. No matter how powerful he was, there was always a villain on his homeworld who was never caught and kept tormenting him, so fans always wondered about it. With the potential arcs like this, as well as the fact that the heroes can visit the 4 liberated universes that weren't allowed in the Tournament of Power because they were powerful, the multiverse seems like the perfect next place for the story.
